How Are Embassy Kitchen and Laundry Facilities Designed?
By Jeremy Mills, CEO & Founder, Apex Grid Engineering — USAF Veteran. · Updated 2026-09-15
Embassy kitchens and laundries get commercial-grade MEP: full exhaust and makeup air for the cooking line, grease and lint management, surge-capable drainage, and isolation so heat, odor, and moisture never reach the rest of the compound.

Kitchen ventilation, gas, and drainage
The kitchen MEP package starts at the cooking line and works outward. Hoods are sized and positioned for the actual equipment — not generic rules — with exhaust rates matched to appliance duty and makeup air tempered for the climate. Gas piping runs with accessible shutoffs, seismic bracing, and leak detection where the risk assessment calls for it. Plumbing delivers high-volume hot water for cooking and dishwashing, drains it through properly sized grease interceptors, and keeps floor drains flowing with the right slopes. Electrical serves the cooking line, refrigeration, and small appliances with the spare capacity kitchens always end up needing. I coordinate the kitchen layout with the chef or food-service consultant early, because moving a gas line after the slab is poured is nobody's idea of value engineering.
Laundry ventilation, moisture, and durability
The laundry's enemies are moisture and heat, and the MEP design fights both continuously. High exhaust rates pull the humid air from dryers and the space; tempered makeup air keeps the room workable; and heat recovery on the exhaust stream recaptures energy that would otherwise go up the stack. Dryer exhaust ductwork is smooth, short, and cleanable — lint fires are a real hazard in neglected ducts. The room construction is moisture-tolerant: washable walls, sloped floors to drains, and no materials that mildew. Equipment gets the power, water, gas, and drainage it needs with isolation valves at every machine so one can be serviced while the rest keep running. A laundry designed for residential duty fails in its first month of compound operation.
Embassy kitchen and laundry checklist
Embassy kitchen and laundry facilities are ready for continuous duty when they clear this checklist. Commercial-grade capacity and isolation govern the design. • Kitchen exhaust and tempered makeup air balanced and commissioned for the full cooking lineup • Grease-rated ductwork with cleanouts, hood suppression interlocked with gas shutoff • Laundry exhaust with heat recovery, lint-managed dryer ductwork, and surge-capable drainage • Kitchens negative to adjacent spaces with sealed ductwork keeping odors contained • Durable washable construction with floor drains throughout both facilities
